🍍 Ingredients
For the Cake
3 cups all-purpose flour
2 cups granulated sugar
1 tbsp baking powder
½ tsp salt
1 cup unsalted butter, softened
4 large eggs
1 cup pineapple juice
1 tsp vanilla extract
½ tsp pineapple extract (optional)
For the Pineapple Glaze
¾ cup pineapple juice
½ cup unsalted butter
1½ cups granulated sugar
1 tsp vanilla extract
Optional Garnish
Powdered sugar
Pineapple slices
Maraschino cherries
Toasted coconut
👩‍🍳 Directions
Step 1:
Preheat your oven to 325°F (163°C). Grease and flour a 10-inch Bundt pan thoroughly.
Step 2:
In a medium bowl, whisk together the flour, baking powder, and salt.
Step 3:
In a large mixing bowl, beat the butter and sugar until light and fluffy, about 4–5 minutes.
Step 4:
Add the eggs one at a time, beating well after each addition.
Step 5:
Mix in the vanilla and pineapple extract (if using).
Step 6:
Alternately add the flour mixture and pineapple juice, beginning and ending with the flour. Mix just until combined.
Step 7:
Pour the batter into the prepared Bundt pan and smooth the top.
Step 8:
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
Step 9:
While the cake bakes, prepare the glaze by combining the pineapple juice, butter, and sugar in a saucepan over medium heat. Stir until the butter melts and the sugar dissolves. Do not boil. Remove from heat and stir in the vanilla.
Step 10:
Let the cake cool in the pan for 10 minutes.
Step 11:
Using a skewer or toothpick, poke holes all over the cake while it’s still in the pan.
Step 12:
Slowly pour about half of the warm glaze over the cake, allowing it to soak in.
Step 13:
Invert the cake onto a serving plate and brush or spoon the remaining glaze over the top and sides.
Step 14:
Allow the cake to cool completely before serving.
Step 15:
Garnish with powdered sugar, pineapple slices, toasted coconut, or cherries if desired.
